I pretty much read horror mostly so I'm 2 books into the Necroscope series by Brian lumley(vampire *not the cute kinds* mixed with psychic military branches), sounds off but trust me lol. Ive enjoyed so far, and it has a very positive review. Plus I thinks there's like atleast 10 books or something.

Series that only have 2 books though, you've got the exorcist house (im reading now) by nick Robert's and the sequel Genesis.

Stolen tongues and its prequel the church beneath the roots by Felix Blackwell (this has a massive following and has been signed for a film alledgedly) very good!

And fantasy this is a given, lord of the rings and the Witcher series.

Minor Mage by T Kingfisher, children's book, but an amazing one. 
Flowers for Algernon, I think it shows how life is just a struggle for anyone. If you're more intelligent, more successful, your struggles are also upgraded.
Douluo Continent, fantasy novel, one of my favorites. Immersive, with huge world building and fleshed out characters.
