How am I not even dating and still getting annoyed?

Alright, short story time. Advice for men: if you're not actively pursuing, dating, or taking care of someone. It's none of your business who they talk to. We call this one Manny. Because I honestly forgot his name. Manny comes off nice and great with conversation. Starts making little remarks about my appearance and I just say thank you. I appriciate that. Then immediately change the subject to keep it friendly. I'm getting vibes he wants to flirt but I'm not cracking open that window with him. Then he asks me is any topic off limits I said anything sexual is off limits. He says okay I can respect that. I said good thank you. Manny says "ofc, I'm a gentleman" 🚩 Gentlemen don't feel the need to declare it just show it with their actions. I respond with a smiley face. Then he doesn't talk to me for about a week. Then hits me a "hey, met anyone interesting lately?" I said yes a new Filipina friend and I actually played volleyball with her today. Then this little Manny boy comes at me with "Why every time I ask you about something further than friends you get defensive?". Now im looking around confused because this is the first time he's ever asked me something like this. I'm feeling like he just flipped on me out of nowhere. Also it's not like weve had many conversations ourselves. So I respond "who are you and why is that any of your business? It's not your business. I don't have a need to get defensive, but I have no problem getting offensive" Little Manny probably never spoken with a latina because he immediately comes with "your mean and lacking manners and I have no interest in that" I just unmatched his ass. Boy don't know what mean is, I was literally raised by women who will throw a chancla at you. 🤣 Anyways. Let me know if y'all want more story times. 🙃
