Ramadan pancakes (gluten free)

I call these Ramadan pancakes because they have everything in them you need to get a good, nutritious boost right before starting your fast to get you through the day- but they ALSO have the right ingredients to make them a good, light pre-workout meal! Complex sugars, healthy fats, and protein all in a tasty, easily snack-able pancake 😁 Ramadan Pancakes (gf): dates milk sorghum flour rice flour honey butter eggs baking powder cinnamon freshly grated nutmeg salt -Pit and cut up dates and place in a saucepan with enough milk (I use milk cut with water) to cover; bring to a boil and let simmer until the dates are soft and mash-able -Take out two mixing bowls. In the first combine the sorghum flour and rice flour in a 4:1 ratio (whatever amount of sorghum flour you use, add 1/4 that amount in rice flour), baking powder, cinnamon and nutmeg to taste (add based on personal flavor preferences), and a pinch of salt. Mix thoroughly with a fork -Separate the eggs (use about 2 eggs for every cup of sorghum flour), placing the whites in the second mixing bowl and the egg yolks into the bowl with the flour. Into this same flour bowl add the honey (approximately 1/4-1/3c honey per cup of sorghum flour) -The milk-date mixture should be ready and cooled to room temperature by now, so add this into the flour mixture, mixing all together thoroughly. Batter should be a bit thick at this point -Next, melt the butter (approximately 2T for every cup of sorghum flour) and add it into the thick batter, stirring to thoroughly incorporate it. Batter should be smoother, but still a bit on the thick side. -Next, whip the egg whites to soft peaks and fold into the batter. Batter should now be normal pancake consistency (if it is a little thicker than normal, that's okay too!) -Heat skillet and grease with residual butter from dish you used to melt the butter in. Skillet should NOT be too hot, since all the sugars in the pancake will burn easily; instead, keep the skillet just warm enough that the butter forms a slight steam coming up from it. Anything hotter will cause your butter and pancakes to burn -Pancakes should fluff up quite a bit while cooking, so even small pancakes made with this batter can end up looking like little cakes 😊
