Favorite childhood food??
I'd like to hear or learn of new foods that are easy to make at home. I already dabble and grew up with Hispanic, Asian and Italian cuisine. My fav food is Ceviché or Green Chili Chicken Enchiladas so far.

For me? I have two favorites from childhood and I actually shared one earlier. 😅 The first is Spankopita or Greek Spinach Pie with crimini mushrooms and sauted onion. It goes really well with soups like butternut squash qnd pumpkin soup or borscht. The second is baked pepperjack Mac n'cheese with fried onion, green peas, bread crumb topping, and, if I'm gelling a little bit protein deprived, I like to throw in some crispy chopped bacon. I've come to enjoy making the Mac n' cheese with cavatappi noodles for the texture. 😁 Should warn you the Mac is made with A LOT of dairy since I'm no longer vegetarian, and is really rich. I usually add in a second solid cheese like a sharp white cheddar as well as cream cheese and use half and half or cream for the cheese sauce. It is pure comfort food. You can also make it spicy 🌶 by adding in peppers, and I would recommend something with fresh fruit like pineapple sorbet as dessert to counter all the creamy-ness. If you want the full experience, I recommend an iced sweet tea or a black cherry Italian soda. 🍒

Damn, that's a toss up. Speaking of Hispanic food my mom, who's is not Hispanic but spent 2 or 3 years in Argentina, made the best carnitas con salsa verde from scratch. It would be that, biscuits and gravy, tuna on toast, or chicken fried steak.
