This is a super easy casserole that tasted great! It is based on recipe from a diabetic friendly cook book and it is great for meal prepping too! Ingredients: -1 can of artichoke hearts -1 bag of frozen spinach ~ half a bell pepper chopped fine ~7-8 white mushrooms thinly sliced -8 eggs -dash or two of almond milk -soft goat cheese -salt -pepper -crushed red pepper Cooking Drain the artichokes, microwave and drain out the spinach, set those aside for a second. Then lightly beat the eggs with a bit of almond milk, as if you were to scramble them. Then mix everything in a bowl, aside from the cheese. Have your oven preheated to 375F. Poor the egg mixture in an 8x8 pan that’s been sprayed with cooking oil. Crumble/break up the goat cheese and sprinkle it on top. Finally bake at 375F for about 30-35 minutes or until the eggs have set. This recipe is high in fiber and has very little sugar or carbs. I recommend pairing it with some fresh berries for a super healthy and tasty breakfast 🧑🍳
