Personally I loved baked tofu. I'll cut it and toss it in whatever spices and a very light oil that I like and bake it until crispy. It's a good protein source and really tasty and easy to make. If that's not your thing that's okay, baby cucumbers have a really nice crunch they're hydrating and super satisfying to eat I think. I also enjoy those vegetable trays and we'll just nibble on those throughout the day if I have one LOL (edited)
