There are ways to preserve food with the same technology as canned food, and since travel was common between the borders of Nubia and other countries, the Nubians were accustomed to drying vegetables, including: "Okra, tomatoes, hot peppers, and on top of them is the famous molokhiya." It is packed in strings and placed in the sun for a long time. then ground and preserved to be ready throughout the year to make types of “edam” in Nubian or cooked dips. Drying plants Such as “hibiscus” and “Aradeeb” , used in the form of refreshing drinks in the hot summer. “Meat” is made from lamb on happy occasions. It is similar to preserving bacon using salt and fat is called “asalad ” in Nubian. “Noodles” are strips made of flour and sweetened with milk at weddings. They were made by hand in the past, before pastry-making machines. They were stacked next to each other on palm leaves, then dried and placed for the bride by the villagers on wedding days. “Abri” is slices of corn flour that are fermented for ten days or more and then baked on an iron pan, ventilated and dried. In a designated, well-ventilated place called the "Oler", there is an alternative to the refrigerator for preserving food products, given the hot weather and the lack of luxury means at that time.
