Maybe recipe recommendations

Hi there! I thought this would be a good place to try to ask if anyone has recommendations. I've had pancit, Philipino barbecue, lumpia, lugaw, tocino, and a few other vegan versions of Philipino food that someone cooked for me. I'm curious to maybe learn more vegan Philipino recipes. I have also had vegan sushi and miso soup, but these were at a restaurant so I am unsure how to make those. I would love to learn though. Especially finding where to get the fake seafood that was used on the rolls. I am also curious about vegan German, Russian, (more) Japanese, Chinese, and maybe other areas' dishes. I am not sure what I will and will not like, because I have sensory struggles.
