If you like something more psycological/methodical start with Deathnote Something nice and fluffy start with Fruits Basket Something dark and violent start with either Gantz or Attack on Titan Something more action with a story then try Bleach, Full Metal Alchemist, Sharman King Something action with less/broader story try Fairytale.

Samurai Champloo is one of my favorites. Bebop is good and by the same people iirc. I'd stay away from anything else labeled "shonen" unless you want to get into stuff made for preteen boys (Bleach, Dragon Ball Z, that one with the giants, One Piece, etc). Dragon Ball (the original) is actually quite funny but don't watch every second of it, I'd say. Some people call Avatar the Last Airbender anime, some don't; can be a fun watch if you want to try it out. More serious stuff would be like Parasyte--that one has horror elements, though, so be prepared. I like the world building and tone in Darker Than Black. Trigun is my favorite but... in the same way that donuts are my favorite food.

Anime is an art style, not a genre. Asking for recommendations for anime is not the same as as asking for rom-com, or horror, or children’s programming. When you watch TV or movies that are live-action, what do you like? We can probably give more thoughtful answers that way.

Studio Ghibli movies but not Grave of the Fireflies. Then just watch whatever is popular. If you like horror: Uzumaki: Spiral Into Horror. The way they make shows in Japan is that they release episodes no matter what during their run. Therfore if they run out of money or plot, they just make something up for an episode or several seasons. These kinds of episodes are called fillers. They also usually have one episode per season made for fan service. There are websites with lists to avoid fillers if you plan to watch long running shows like Naruto or One Piece. My personal recommendation is to watch Full Metal Alchemist and avoid the fillers. And watch the second series Full Metal Alchemist: Brotherhood in it's totality. Honorable mantions: Cowboy Bebop, Spy x Family, Puella Magi Madoka Magica (unironically one of the best animes ever made) and Death Note. (editado)

It's hard to say, for you to instantly love it I'd say, Death Note, short and great. For something a bit longer but still deep, Full Metal Alchemist Brotherhood. The only issue with these, for me, is that you'd be starting on a high note, and it's hard to keep that level.
