Ingredients: - 1 cup glutinous (sticky) rice - 1 1/2 cups water - 1 1/2 cups coconut milk - 1 cup sugar - 1/2 teaspoon salt - 2 ripe mangoes, peeled and sliced - Sesame seeds for garnish (optional) Instructions: 1. Cook the Rice: - Rinse the sticky rice in water until the water runs clear. - Soak the rice in water for at least 30 minutes, or up to 4 hours. - Drain the rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel. - Steam the rice over simmering water for about 20-25 minutes, or until tender. 2. Make the Coconut Sauce: - While the rice is cooking, combine the coconut milk, sugar, and salt in a saucepan. - Heat over medium heat, stirring until the sugar is dissolved. Do not boil. - Remove from heat. 3. Combine Rice and Coconut Sauce: - When the rice is cooked, transfer it to a mixing bowl. - Pour about 1 cup of the coconut sauce over the rice and stir well to combine. - Let the rice sit for about 10-15 minutes to absorb the coconut sauce. 4. Prepare the Mangoes: - While the rice is absorbing the sauce, peel and slice the mangoes. 5. Serve: - Place a portion of the sticky rice on a plate. - Arrange mango slices on top or alongside the rice. - Drizzle some of the remaining coconut sauce over the rice and mango. - Garnish with sesame seeds, if desired.
