Easter Chocolate
More low-key this year. This one's a coloured white chocolate shell filled with salted caramel at the top and colombian milk choc ganache at the bottom (I think 45-55%?). The salted caramel is top tier. Haven't tried better. Perfect consistency. The milk chocolate ganache was nice, dark sugar notes. The white choc shell was a really good thickness and because white chocolate is softer, easier to bite into than dark chocolate. Saying that, I think dark chocolate flavour works better than white does with salted caramel. Overall though, it was creamy chocolate with three different textures and flavour profiles. Very interesting. Never tried salted caramel with white chocolate before.
