The saison was bubling away within 2 hours of pitching an active starter. This morning it has a nice white krausen and highly active fermentation. I left a good amount of headspace as I figured this one might get away from me in a messsy way. (edited)

Saison Brewday
7lbs Pils 3lbs Vienna 1lb Munich Mashing around 147F for 40min for high fermentability. We want her dry and krispy. Then ill bump it up to about 156F for 20min, the knock it out at 168F, sparge, boil. Will make an addition of maple syrup at the end of the boil. Saaz and fuggles for hop additions. (edited)
