I keep being told and shown that you have to play it cool and not be too invested in someone to get them interested, but thats ridiculous to me. Relationships should be about how both people adore each other and are madly in love. Otherwise its no different than having a roommate

Agreed. I think what you're hearing is a useless old trope about dating. If that person really wants you (and they should) then you showing interest is not going to put them off. It might make someone who isn't really into you uncomfortable, and that's good too because now you're not entangled with someone who isn't into you enough. (edited)
