Does anyone have any tips for icings. I typically make a simple buttercream icing or cream cheese icing but when I see those decorating videos their icing looks so much smoother than mine. Baking the tomatoes from my garden for sauce

I bake them covered in olive oil and spices for about 25 minutes and then put them through the food mill to create the base for the tomato sauce.
