Baking the tomatoes from my garden for sauce

I bake them covered in olive oil and spices for about 25 minutes and then put them through the food mill to create the base for the tomato sauce.

Baking tips

Does anyone have any tips for icings. I typically make a simple buttercream icing or cream cheese icing but when I see those decorating videos their icing looks so much smoother than mine.
