My second attempt coming along nicely
Decided to make a desert wine style of mead. First attempt was completely bitched while this one seems to go better with US05. Anyone got an idea on how long primary should be before I put it into secondary?

Blackberry Wine
I'm usually a mead maker but I took one of my mead recipes and just substituted the honey with sugar. Hope I will have 6 good gallons.

Brew Staff Update
Pictured here is this months employee of the month. Typhoon (listed here) is busy keeping an eye on the primary fermination stage. He is doing his best to help degass a 6.5 gallon carboy. Keep up the excellent work Typhoon and one day you will be brew master!

Hard Iced Tea
So I've decided to make a batch of hard iced tea using nothing but off the shelf ingredients. Generic tea bags, cane sugar, yeast nutrient and EC-1118 yeast. I'll use potassium sulfate to stop the fermentation at 8% and then add the lemon when I move it into the keg at the bar.

Hard Cider Help
Our apple trees didn't do so great this year, has anyone tried using apple juice concentrate for brewing? I'm hoping it's a cost effective way to make some cider.

Started racking some mead that was WAY overdue from getting forgeten during my move The Acadia Dragon Fruit mead turned to vinegar But like..... It's still g o o d (edited)
Beefsteak Rye Whiskey
I boiled an 18 oz loaf of Beefsteak Rye bread for 30m, disolved 5-lbs of cane sugar, added yeast nutrient, set the ph to 5+, and pitched 1 packet of EC1118 yeast. I'll be adding this to my Frosted Whiskey batch post distillation but retaining some of it on the side. (edited)

Started the marizpan beer Friday. Ight (see previous post) Flea market had a farmers tent and picked up a $10 sangria watermelon. Wasn't able to fit it all in my 2gal bucket fermenter. Watermelon wine in the way!
