Up until this point in my career I'd had some fun opertunities but nothing as big as when I ran this little kitchen. This was my first time making Hungarian goulash, it was for an Avalanche Hockey retiree party of almost 400. I got to learn this recipe from one of the players wives, along with a great pickled kielbasa and sausage recipe. This being many years ago I look back and see how much I've grown, including how I've made this dish. Since then I've got to do if a few more times in a professional capacity and it's only gotten better and more refined. Cooking isn't just about what you see on the media side and nutrition side, it's history and exploration. God I miss the mid west, so much more love for food out there.
