Give classic Bolognese a fresh, modern spin with this colorful dish that’s as lively as an Italian summer! 🌞🍝  

A grandmother in Sicily thought me this recipe some years ago. She usually cooked it for her sons to encourage them if they came home after a night out at sea and without getting a catch. 

The Twist: A bright kick of lime zest in the rich meat sauce cuts through the richness and adds a citrusy pop you’ll crave. Paired with tricolored penne (red, white, green), it’s a feast for the eyes, and palate! 🇮🇹💚  

How I make it:
1. Sautévonions, garlic, carrots, and green celery in olive oil until soft.  
2. Brown ground beef (or mincemeat), then deglaze with red wine.  
3. Simmer with crushed tomatoes, herbs (oregano, basil), and a generous pinch of lime zest for 20+ minutes.  
4. Toss with cooked tricolored penne, finish with Parmesan, and garnish with fresh basil and extra lime zest.  

The lime’s zing balances the savory depth of the sauce, while the tri-colored pasta brings festive flair to your plate. Serve with garlic bread and a crisp green salad—*perfectiono*! 🥖🥗

1) If you find a recipe requiring you to marinate beetroot in lemon juice with sugar that's bs. Just grate the beetroot and mix it in with other ingredients. 2) Sugar could be used only if you don't want to make more of that soup because the only logical way is to add more kefir to make it less acidic (if you added too much lemon juice or vinegar). In general a lot of ingredients like cucumbers, beets and boiled eggs can be grated. Other ingredients such as dill and green onions are cut to your preferred size. 
Usually we serve it with boiled or baked potatoes on the side.
