Someone help explain
Is 'white' every colour together or is it the absence of colour? Also, is there any object that is truly white? Not just an extremely light shade.

If you are talking about light, then white is all colors, or more specifically all the colors that the human eye can perceive. The more saturated the receptors at the back of your eye are with color signals, the brighter the white. An easy experiment is to shine a red, green, and blue light on a wall, overlapping them partially. Where all three overlap you will get an approximation of white. With ink or paint, the process feels reversed, even though the science is the same. That’s because inks work on a subtractive model, whereas light based mediums (like computer screens and projectors) work on an additive model.
