When people say “nice to meet you” I wanna ask why is it nice to meet me you don’t even know me

It's starting the potential relationship on a more positive note as apposed to a negative or neutral. 
The greater disposition you can start off with the less effort it takes to devople your relationship further in future.
Starting on a negative or neutral means you'll have to try harder to get anywhere with them in future.

To put in an analogy, the former is chucking a rope over to show interest in making a bridge while the latter is chipping away at the banking to make the casium wider.

I usually prefer “it’s a pleasure to make your acquaintance”. At the back of my mind I would be thinking “for now at least”

They don't know you but they have a first impression about you that motivated them to be interested in you enough to meet you, so at first the interest is based on the impression they have after reading your posts like me or seeing only your photos if they were too shallow
