Sunny chanterelles

I found a handful of chantarelle mushrooms while strolling through the forest today! Barely enough for one, but still better then nothing. I am eating them with buckwheats, olives and paprika pepper right now. What a nice little dinner it is.

I collected mushrooms and rosehips. Rosehips are used for tea and marmalade. I cooked mushrooms with olive oil, onion, garlic, thyme and salt.

This autumn brought a LOT of mushrooms here in Denmark. So many that sometimes when going on a run or a short hike I end up picking mushrooms – and just returning home 😅🤷🏻‍♀️

Scalloped from scratch . Another simple and easy recipe I have never made them before first time for everything. Only thing I would change is skip making the onion garlic sauce basically just a gravy. I’d use mushroom soup add chopped mushrooms onion whatever you like . Make it easy too
