For me, the answer is Arch Linux and NixOS. I love how on Arch Linux, it is usually possible to get any piece of software I want with minimal fuss. If the software somehow isn't in Arch's repositories, including the Arch User Repository (AUR), I can always package it for myself as Arch's packages are specified using pretty simple shell script packaging files. Sure, bugs do happen, but I don't find bugs all that more frequent on Arch Linux than it is on "stable" distros like Ubuntu and Debian. I tend to update my system daily, so system breakage is pretty rare. That being said, I like NixOS' reproducibility. I also like the extra confidence in the stability of my system that it provides. As if a new build of my system fails to boot for some reason, or has some major bug, I can always boot an older build. I also like how you can customize the system with just a single config file. I also like how its nixos-rebuild command will typically not let me build a broken config (there are exceptions, like it will let you build a broken hardware config), so I can be fairly confident that if that command runs the new build will be bootable. That being said, the learning curve for it is massive and I do find that the documentation isn't punctuated with enough practical examples for me to be able to follow it. So when I use NixOS, I often find myself having to ask questions in their forums. When using NixOS, I also sometimes miss having the very latest software from Arch. I wouldn't recommend either to a Linux newcommer, but they work well for me. (edited)
