I think it all really depends what you decide on saying first .I personally prefer to share openly to make another person feel as comfortable..

Assuming it is a one-on-one conversation, I tend to try to relate what they say to my own experiences. That way we can find common ground or realize difference. For certain subjects, it's better just to let them express themselves and be present for them. I don't naturally bring up my interests out of the blue, and I don't naturally lead/initiate conversations. Not that good for dating apps, I am aware. :P
