This question has probably been asked multiple times before..but, would you date someone with kids? If not, why?

Sure. People my age usually have a past and many of them have kids from previous relationships. Two exceptions: multiple kids from multiple relationships and keeping no contact with own children. Big red flags.

Never been in that situation, but I'd say it depends on a number of factors, not each individually a deal breaker, but collectively would add up to more than I could carry. Primary reason is I don't want to have kids myself until I know I can afford to stress free and comfortably, like maybe after paying off the house or at least the car. If I'm just assisting and not full on supporting them there's wiggle room there to keep an open mind.
