So the main ruling on marriage is that a Muslim man can marry any woman that is monotheistic (one God). However, women aren't "allowed" to marry outside of the religion because the children in a family usually take on the religion of the father. My suggestion would be to listen to the Quran on YouTube just to know what rules your future wife is supposed to live by and support her. Aid her in keeping up with her prayers and to follow as much as possible of the faith. If you tell the religious leader that you'll take on the responsibility to keep her a good Muslim woman, then I'm sure they'd reconsider, although it's not allowed.

Id just talk it out between yourself because i don't think itll mena anytging specific. If there already a rule that youre not suppose to do it but shes fine with it anyway then she probably already has her way of doing things. The secret sauce is always proper communication so just sit down with each other and have a nice long conversation about what your desires and expectation for the relationship are. If there are problems with how you want to live your life, spend your time, or raise potential kids then you have a thought about how kuch your willing to compromise. Its healthy to have dealbreakers everyone has them. If there aren't any forseeable problems then it dont matter is she muslim or not
