I'd like to hear or learn of new foods that are easy to make at home. I already dabble and grew up with Hispanic, Asian and Italian cuisine. My fav food is Ceviché or Green Chili Chicken Enchiladas so far.

Made enchiladas, Spanish rice, and refried beans for dinner. Turned out so well that my nephew, a picky 9 yo, actually cleaned his plate and complemented the meal.
