These are essentially jalapeno poppers wrapped in ground sausage and shaped like an egg and then wrapped in bacon. In this instance I didn't have ground sausage on hand so it ended up being ground beef that was seasoned, had some minced garlic and onions, a dash of Worcestershire, then wrapped in bacon and finished off in the cast iron in the oven. You can also cook these in a smoker or grill, but they need to be done low and slow. These could be a side dish or the entree, so decided to do them as an entree and served a twice baked potato and some butter corn with a little salt and pepper. For those of you not in the know, a twice baked potato is a potato you bake, slice on the length scoop out the insides and you don't have to get all the potato out of the skin, you actually want to leave some in the skin for structural integrity. You take the insides and basically make loaded mashed potatoes, bacon, sour cream, some cheese, green onions, choice seasonings. After you got your loaded mashed potatoes you divy it all back into the skins, top with a little cheese and bacon and bake for another 15 minutes. If you wanna get a little more creative you could roll the skins of the potatoes in olive oil, or even water and then choice seasonings.
