Two of my favorite African restaurants unfortunately closed during the pandemic. I have been saying for months I was going to make some of my favorite Nigerian dishes at home. Last weekend I made Chicken stew. Today I made Egusi Soup.I used smoked turkey and lamb. I added a little Norwegian stockfish but I ground it up as I don't care for the hard texture of the dried fish. I used organic dandelion greens and spinach in place of bitter greens. I have to say the soup came out really tasty despite the fact I haven't made this dish in over twenty years. Served with fufu and sweet plantains this is Nigerian comfort food. It was so worth spending the entire morning in the kitchen. (edited)
