All depends on the person, there are people who are genuinely nice and use words like baby, honey, sweetheart and sweetie because they are naturally kind hearted, if you aren't use to it you may find it either offensive or have a moment of surprise. The elderly have a habit of calling folks nice names like that out of just being simply kind. Try not to get offended if it's out of a natural habit. But when it comes to dating yeah that's different. There is a time for names and a time to be formal until it feels right.
